History
Il Trombone goes back to the love and passion of Pietro Olivieri for the food of his native Umbria. He transformed part of his home into a place for food and music in Spello. His garden was transformed into a panoramic terrace and the cellar became a restaurant.
Pietro removed large rocks and cleaned up the garden, leaving the beautiful medieval walls. In 1985, the restaurant was born, at first as a piano bar.
Thanks to the innovative design of local architect Stefano Antinucci, the restaurant soon became a local institution as one of the region’s most happening piano bars, whose clients came from far.
Over time, the food aspect became more important and Il Trombone became a restaurant specialised in local cuisine, famous for its beautiful location and view.
Our guests enjoy sitting by our open fireplace during the winter, or on our beautiful and panoramic terrace during the rest of the year. Il Trombone offers an a la carte menu, as well as fixed price and vegetarian options. Our venue can be booked for celebrations and special events with music and entertainment.

Cristiana Olivieri, Pietro’s daughter, now manages the restaurant with great passion. She is supported by Orietta, her friend and co-worker. Together, they offer the best of local hospitality and make sure that you will have an unforgettable experience.
